Method
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- Cook macaroni until al dente. Drain well.
- Melt butter in a saucepan. Whisk in flour and cook for 1 minute.
- Gradually whisk in whole milk until smooth. Cook until thickened, about 5-7 minutes.
- Remove from heat. Stir in evaporated milk, salt, pepper, nutmeg, and cayenne pepper.
- Temper eggs with hot cheese sauce. Pour back into saucepan, whisking constantly.
- Add cheddar, Monterey Jack, Colby, and Gruyère cheeses. Stir until melted and smooth.
- Add cooked macaroni to cheese sauce and stir gently.
- Pour into baking dish. Sprinkle extra sharp cheddar cheese on top.
- Bake for 25-30 minutes, until bubbly and golden brown.
- Let rest for 10 minutes before serving.
Notes
For an extra crispy top, broil for the last 2-3 minutes, watching carefully to prevent burning.
