  • 1 pound elbow macaroni
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 4 cups shredded cheddar cheese, divided
  • 1 cup shredded Gruyere cheese
  • 1/2 cup panko bread crumbs
  • 2 tablespoons melted butter

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cook macaroni according to package directions. Drain.
  3. Melt 1/2 cup butter in a saucepan. Stir in flour until smooth. Whisk in milk until smooth. Simmer, stirring constantly.
  4. Reduce heat. Stir in salt, pepper, and paprika.
  5. Add 3 cups cheddar and Gruyere cheese, stirring until melted.
  6. Stir in cooked macaroni until well coated.
  7. Pour into a greased 9x13 inch baking dish.
  8. Combine panko and 2 tablespoons melted butter. Sprinkle over macaroni.
  9. Sprinkle remaining 1 cup cheddar cheese over the bread crumbs.
  10. Bake for 20-25 minutes, or until golden brown.

Notes

For an extra creamy texture, use a blend of sharp cheddar and a touch of cream cheese.
