Method
- Preheat oven to 350 degrees F (175 degrees C).
- Cook macaroni according to package directions. Drain.
- Melt 1/2 cup butter in a saucepan. Stir in flour until smooth. Whisk in milk until smooth. Simmer, stirring constantly.
- Reduce heat. Stir in salt, pepper, and paprika.
- Add 3 cups cheddar and Gruyere cheese, stirring until melted.
- Stir in cooked macaroni until well coated.
- Pour into a greased 9x13 inch baking dish.
- Combine panko and 2 tablespoons melted butter. Sprinkle over macaroni.
- Sprinkle remaining 1 cup cheddar cheese over the bread crumbs.
- Bake for 20-25 minutes, or until golden brown.
Notes
For an extra creamy texture, use a blend of sharp cheddar and a touch of cream cheese.
