  • 1 cup shredded mozzarella cheese
  • 1/2 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Cook macaroni according to package directions. Drain and set aside.
  3. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes.
  4. Gradually whisk in milk, stirring constantly until thickened. Add salt, pepper, and paprika.
  5. Stir in cheddar and mozzarella cheeses until melted. Add sour cream, then fold in the cooked macaroni.
  6. Pour the mixture into the baking dish. Sprinkle extra cheese on top. Bake for 35-40 minutes.
  7. Let cool briefly before serving.

For an extra crispy top, broil for the last few minutes of baking.
