  • 1 pound elbow macaroni
  • 1/2 cup butter plus more for greasing
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional
  • 4 cups shredded sharp cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded Gruyere cheese optional
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Cook macaroni according to package directions. Drain well.
  3. In a large saucepan, melt butter over medium heat. Whisk in flour until smooth.
  4. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat and simmer for 5-7 minutes, or until thickened.
  6. Remove from heat and stir in salt, pepper, and cayenne pepper (if using).
  7. Add cheddar, Monterey Jack, and Gruyere (if using) cheeses to the sauce, stirring until melted and smooth.
  8. Stir in sour cream.
  9. Add cooked macaroni to the cheese sauce and stir to combine.
  10. Pour macaroni and cheese mixture into the prepared baking dish.
  11. Sprinkle with Parmesan cheese.
  12. Bake for 20-25 minutes, or until golden brown and bubbly.

Notes

For an extra crispy top, broil for the last few minutes of baking.
