Method
- Preheat oven to 350 degrees F (175 degrees C).
- Cook macaroni according to package directions. Drain and set aside.
- Melt 1/4 cup butter in saucepan. Whisk in flour until smooth. Gradually whisk in milk until smooth. Simmer, stirring constantly.
- Reduce heat and simmer for 5-7 minutes, or until sauce has thickened slightly. Stir in salt, pepper, and cayenne pepper (if using).
- Remove from heat and stir in 3 cups cheddar, Monterey Jack, and Parmesan cheese until melted and smooth.
- Add cooked macaroni to the cheese sauce and stir to coat evenly.
- Pour macaroni and cheese mixture into a greased 9x13 inch baking dish.
- Melt remaining 1/4 cup butter and drizzle over the top. Sprinkle with remaining 1 cup cheddar cheese.
- Bake for 20-25 minutes, or until golden brown and bubbly.
Notes
For an extra crispy top, broil for the last 1-2 minutes, watching carefully to prevent burning.
