  • 1 pound elbow macaroni
  • 1/2 cup butter divided
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional
  • 4 cups shredded cheddar cheese divided
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cook macaroni according to package directions. Drain and set aside.
  3. Melt 1/4 cup butter in saucepan. Whisk in flour until smooth. Gradually whisk in milk until smooth. Simmer, stirring constantly.
  4. Reduce heat and simmer for 5-7 minutes, or until sauce has thickened slightly. Stir in salt, pepper, and cayenne pepper (if using).
  5. Remove from heat and stir in 3 cups cheddar, Monterey Jack, and Parmesan cheese until melted and smooth.
  6. Add cooked macaroni to the cheese sauce and stir to coat evenly.
  7. Pour macaroni and cheese mixture into a greased 9x13 inch baking dish.
  8. Melt remaining 1/4 cup butter and drizzle over the top. Sprinkle with remaining 1 cup cheddar cheese.
  9. Bake for 20-25 minutes, or until golden brown and bubbly.

Notes

For an extra crispy top, broil for the last 1-2 minutes, watching carefully to prevent burning.
