Method
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Cook macaroni according to package directions. Drain well.
- Melt 1/2 cup butter over medium heat. Stir in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
- Reduce heat to low and simmer for 5-7 minutes, or until sauce has thickened. Stir in salt, pepper, and cayenne pepper (if using).
- Remove from heat and stir in 3 cups cheddar cheese, Monterey Jack cheese, and Gruyere cheese (if using) until melted and smooth.
- Add cooked macaroni to the cheese sauce and stir to combine.
- Pour macaroni and cheese mixture into the prepared baking dish.
- Combine bread crumbs and 2 tablespoons melted butter. Sprinkle over the top of the macaroni and cheese.
- Sprinkle remaining 1 cup cheddar cheese over breadcrumbs.
- Bake for 20-25 minutes, or until golden brown and bubbly.
Notes
For an extra crispy topping, broil for the last 1-2 minutes, watching carefully to prevent burning.
