  • 1 pound elbow macaroni
  • 1/2 cup butter divided
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional
  • 4 cups shredded cheddar cheese divided
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Gruyere cheese optional
  • 1/2 cup bread crumbs
  • 2 tablespoons melted butter

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. Cook macaroni according to package directions. Drain well.
  3. Melt 1/2 cup butter over medium heat. Stir in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  4. Reduce heat to low and simmer for 5-7 minutes, or until sauce has thickened. Stir in salt, pepper, and cayenne pepper (if using).
  5. Remove from heat and stir in 3 cups cheddar cheese, Monterey Jack cheese, and Gruyere cheese (if using) until melted and smooth.
  6. Add cooked macaroni to the cheese sauce and stir to combine.
  7. Pour macaroni and cheese mixture into the prepared baking dish.
  8. Combine bread crumbs and 2 tablespoons melted butter. Sprinkle over the top of the macaroni and cheese.
  9. Sprinkle remaining 1 cup cheddar cheese over breadcrumbs.
  10. Bake for 20-25 minutes, or until golden brown and bubbly.

Notes

For an extra crispy topping, broil for the last 1-2 minutes, watching carefully to prevent burning.
