Method
- Preheat oven to 350 F. Line a large baking sheet with parchment paper.
- Whisk coconut oil and sugars until combined. Add egg and extracts; whisk vigorously until smooth.
- Pour flour, baking soda, and salt over wet ingredients; stir until just combined.
- Roll dough in sugar twice. Space onto baking sheet. Sprinkle remaining sugar over cookies.
- Bake for 8-10 minutes, until tops crack and edges lift. Cool on sheet for 10 minutes before moving.
Notes
For a richer flavor, use refined coconut oil. Refined coconut oil has a neutral flavor.
