  • 1/2 cup coconut oil melted
  • 1/2 cup granulated sugar
  • 2 tablespoons brown sugar packed
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract optional
  • 1 1/4 cups flour packed
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons granulated sugar for rolling

Method
 

  1. Preheat oven to 350 F. Line a large baking sheet with parchment paper.
  2. Whisk coconut oil and sugars until combined. Add egg and extracts; whisk vigorously until smooth.
  3. Pour flour, baking soda, and salt over wet ingredients; stir until just combined.
  4. Roll dough in sugar twice. Space onto baking sheet. Sprinkle remaining sugar over cookies.
  5. Bake for 8-10 minutes, until tops crack and edges lift. Cool on sheet for 10 minutes before moving.

Notes

For a richer flavor, use refined coconut oil. Refined coconut oil has a neutral flavor.
