  • 3/4 cup Brown sugar dark brown sugar or light brown sugar
  • 1/4 cup Granulated sugar
  • 1/2 tsp Kosher salt
  • 2 tsp Vanilla extract
  • 1 tsp Ground coffee
  • 1 Egg
  • 1 Egg yolk
  • 1 2/3 cups Flour plus 2 tbsp
  • 1 tsp Baking soda
  • 1 cup Chocolate chips

Method
 

  1. Whisk oil, sugars, coffee, vanilla, and salt until combined.
  2. Mix in egg and egg yolk until smooth.
  3. Add flour and baking soda, mix until almost combined.
  4. Fold in chocolate chips gently.
  5. Chill dough for at least 30 minutes (or overnight).
  6. Scoop dough onto a baking sheet.
  7. Bake at 350°F (180°C) for 9-11 minutes.
  8. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
  9. Sprinkle with flaky salt and serve.
