  • 1 pound elbow macaroni
  • 6 tablespoons butter divided
  • 1/4 cup all-purpose flour optional, for slightly thicker sauce
  • 3 cups milk
  • 4 cups shredded cheddar cheese or a mix of cheddar and other cheeses like Gruyere or Monterey Jack
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: breadcrumbs, paprika

Method
 

  1. Cook macaroni according to package directions. Drain well.
  2. Melt 4 tablespoons of butter in the same pot over medium heat. If using flour, whisk it in and cook for 1 minute.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly to prevent scorching.
  4. Reduce heat to low. Add cheese, salt, and pepper. Stir until cheese is melted and sauce is smooth and creamy.
  5. Add cooked macaroni to the cheese sauce and stir to combine.
  6. Melt the remaining 2 tablespoons of butter and drizzle over the mac and cheese. Sprinkle with breadcrumbs or paprika, if desired.
  7. Serve immediately.

Notes

For an extra creamy texture, use whole milk and freshly grated cheese.
