  • 16 ounces macaroni
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper
  • 3.5 cups 2% milk
  • 8 ounces medium cheddar cheese (shredded)
  • 8 ounces extra sharp cheddar cheese (shredded)

Method
 

  1. Preheat the oven to 375 degrees F.
  2. Boil macaroni for 8-9 minutes. Strain and set aside.
  3. Melt butter in a large pot over medium heat.
  4. Sprinkle flour, white pepper, salt, and cayenne pepper over butter, whisk until smooth.
  5. Stir in milk 1/2 cup at a time until incorporated.
  6. Add medium cheddar and half of the extra sharp cheddar, stir until melted. Stir in macaroni.
  7. Pour into a 3 quart baking dish. Top with remaining extra sharp cheddar.
  8. Bake at 375 F for 30 minutes.

Notes

For an extra crispy top, broil for the last few minutes of baking.
