  • 16 ounces macaroni
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper
  • 3.5 cups 2% milk
  • 8 ounces medium cheddar cheese (shredded)
  • 8 ounces extra sharp cheddar cheese (shredded)

Method
 

  1. Preheat the oven to 375 degrees F.
  2. Boil macaroni for 8-9 minutes, then strain.
  3. Melt butter in a large pot over medium heat.
  4. Add flour, white pepper, salt, and cayenne pepper to butter, whisk until smooth.
  5. Stir in milk gradually until incorporated.
  6. Add medium cheddar and half of the extra sharp cheddar, stir until melted. Stir in macaroni.
  7. Pour into a baking dish. Top with remaining extra sharp cheddar.
  8. Bake at 375 F for 30 minutes.

Notes

For an extra crispy top, broil for the last few minutes of baking.
