  • 200 g dark chocolate
  • 120 g unsalted butter
  • 100 g granulated sugar
  • 100 g soft light brown sugar
  • 2 eggs
  • 150 g plain flour
  • 25 g cocoa powder sieve if lumpy
  • 1 teaspoon baking powder
  • 0.125 teaspoon salt
  • Some flaky salt to sprinkle over the baked cookies (optional)

Method
 

  1. Pre-heat oven to 180c/350f. Line baking trays with baking paper.
  2. Melt dark chocolate and butter in a pot or microwave, then cool.
  3. Leave aside to cool down.
  4. Whip eggs, granulated sugar, and brown sugar on high speed for 5 minutes until light and doubled in volume.
  5. Fold in the cooled melted chocolate and butter mixture until combined.
  6. Add flour, cocoa powder, baking powder, and salt. Fold until no flour is visible.
  7. Pipe or scoop batter onto trays, leaving gaps for spreading.
  8. Bake for 18-20 minutes.
  9. Sprinkle with flaky salt (optional).
  10. Cool on the tray for 20 minutes before picking up.
  11. Enjoy!

Notes

For a richer flavor, use high-quality dark chocolate.
