Method
- Pre-heat oven to 180c/350f. Line baking trays with baking paper.
- Melt dark chocolate and butter in a pot or microwave, then cool.
- Leave aside to cool down.
- Whip eggs, granulated sugar, and brown sugar on high speed for 5 minutes until light and doubled in volume.
- Fold in the cooled melted chocolate and butter mixture until combined.
- Add flour, cocoa powder, baking powder, and salt. Fold until no flour is visible.
- Pipe or scoop batter onto trays, leaving gaps for spreading.
- Bake for 18-20 minutes.
- Sprinkle with flaky salt (optional).
- Cool on the tray for 20 minutes before picking up.

For a richer flavor, use high-quality dark chocolate.
