  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup peeled, cored, and finely chopped apples about 1 medium apple
  • 1/2 cup chopped nuts optional
  • 1/2 cup raisins optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Cream butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg and vanilla extract until well combined.
  4. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in chopped apples, nuts, and raisins (if using).
  7. Drop rounded tablespoons of dough onto the baking sheet, spacing 2 inches apart.
  8. Bake for 10-12 minutes, or until edges are golden brown.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Serve warm or at room temperature. Enjoy!

Notes

For a richer flavor, use brown butter instead of softened butter.
